Simple Low-Carb Dinner Recipes
After a long day, you want something comforting but healthy. These meals hit the spot without keeping you in the kitchen for hours.
1. Steak and Buttered Mushrooms
The ultimate low-carb luxury. Pan-sear a steak (ribeye is best for fat) for 4 minutes per side. In the same pan, sauté button mushrooms in the steak juices with a knob of butter and minced garlic or garlic powder. Simple perfection.
2. Baked Salmon with Asparagus
The "lazy" dinner. Place salmon fillets and asparagus spears on a single baking sheet. Drizzle everything with olive oil, lemon juice, salt, and pepper. Bake at 400°F (200°C) for 12-15 minutes.
3. Taco Salad Bowl
Everyone loves taco night. Brown ground beef with cumin, chili powder, and onion powder. Serve over a huge bowl of shredded lettuce. Top with sour cream, cheese, salsa, and avocado. Skip the chips; use pork rinds if you need a crunch!
4. Pesto Chicken Bake
Place chicken breasts in a baking dish. Smear a tablespoon of pesto (check label for soybean oil - olive oil is better) on each breast. Top with a slice of mozzarella cheese and tomato. Bake at 375°F for 25-30 mins.
